MEAT, GAME AND POULTRY ame HIGH STEAKS D orset is as productive as it is picturesque. Most of this outstanding county is farmland and produces some of the UK’s finest meat, game and poultry. Dorset’s varied rolling landscape means a diversity of meat production. From the native breed beef cattle and sheep grazing on lush pasture to free-range poultry and pigs rooting outdoors with the sun on their backs, as well as a brace of wild game, the livestock are as much a part of the rural vista as any natural feature. So try to avoid the phoney photography on the supermarket packaging and ask your butcher or farm shop where their meat comes from. Buying local high-welfare meat that has been less intensively reared reduces the impact on the environment, supports local communities and, as any decent chef will tell you, tastes better. try See Also… Brace of Butchers p84 Kingston Maurward p85 Washingpool Farm p88 17
