Shrimp Diavolo

INGREDIENTS

1 package (12 oz.) SeaPak® Shrimp Scampi

1/2 lb. linguine, uncooked

1 medium onion, thinly sliced

1 can (14.5 oz.) diced tomatoes

1/2 cup dry white wine

1 1/2 tbsp. Italian seasoning

1 tsp. dried crushed red pepper (add to taste)

1/3 cup shredded Parmesan (if desired)

INSTRUCTIONS

Cook linguini according to package directions and just to al dente.

Cook shrimp scampi according to package directions. Scoop shrimp out of pan with a slotted spoon and set shrimp aside. Return pan with remaining scampi sauce to stove and turn heat up to medium high. Add onion and sauté for 5 minutes, until onions are translucent.

Add diced tomatoes (including juice), wine, Italian seasoning and crushed red pepper. Bring mixture to low, rolling boil. Boil mixture for 7 minutes, stirring occasionally. Add shrimp to mixture in pan and continue sautéing for 3 minutes. Add cooked linguini and toss to coat. Serve with shredded Parmesan, if desired.
