Porcini Mushroom
It advises mushroom hunters to bring a mesh
onion bag, basket or paper grocery bag
(not plastic) and a cooler in which to keep
mushrooms.
Care in removing mushrooms from the ground
is advised. “Don’t pull them out of the ground;
pinch them off or cut stems with a knife,” the
guide suggests.
“Don’t wash them; brush off the dirt. Then either
dry them for future use or sauté them in butter
and use immediately in pastas, omelets or
sauces.”
Morchella esculenta, a cone-shaped mushroom
commonly known as the morel, sponge
mushroom, or honeycomb morel, was adopted
as the official mushroom of the state of
Minnesota in 1984. The creamy tan/brown/
gray morels grow 2 to 6 inches high through
the leaf mat in fields and forests, usually in the
spring. They are more common in southeastern
Minnesota.
Other mushroom species
In addition to morels, a wide variety of other
mushrooms abound in Minnesota. For example,
Shiitake mushroom growers were part of the
Sprout Growers and Makers Holiday Market Dec.
8, 2018, in Little Falls.
Chef Paul Ruszat of St. Cloud, who frequently
uses mushrooms as a protein substitute in his
dishes, collaborates with Matt Ratliff of Ready-2-
Fruit Mushrooms and Fruits Nuts and Vegetable
Farms in Pine River. The company produces
a wide array of mushrooms, including eight
different types of shiitake, 14 different types of
oyster mushrooms, lion’s mane mushrooms,
maitake mushrooms, and three different
varieties of morels. Together, the two created a
dish containing mushrooms grown by Ratliff,
along with local vegetables like onions and
carrots sourced from other growers within 50
miles of Little Falls.
