Fresh Lettuce with Olives and Goat Cheese • • • • • • • • 2 cups mild lettuce of your choosing 1 tsp fresh thyme leaves 2 ounces goat cheese crumbled ½ cup Kalamata olives 3 Roma tomatoes cut in chunks 2 tbsp extra virgin olive oil 1 sliced red onion Salt and pepper to taste Wash lettuce and tomatoes. In a medium sized bowl add lettuce, crumbled goat cheese, olives chunked tomatoes and thyme leaves. Then add olive oil, salt and pepper to your liking. Great add-ins for this salad is walnuts, pine nuts, cranberries and lemon juice. The choices are endless. Enjoy!
