An avid supporter of the local farming community , Barry Saunders of Inn at the Forks and Era Bistro & Catering won bronze with a succulent lamb belly and creamy celeriac purée kissed with a fi g and rosemary glaze . Chef Melissa Makarenko of Resto Gare Bistro & Train Bar drew on her eastern European roots and claimed the silver medal with a trio of treatments of local wild boar . Past-medallist Jesse Friesen of Pizzeria Gusto took home the gold , delighting judges with his beautifully presented plate of yellowfi n tuna tartare , avocado mousse and a ‘ spoon ’ of crispy turkey crackling .
