Choc Puff Bites A travel snack that is delicious and healthy! Prep Cooking Skill level 10 mins N/A (refridgeration required) Easy INGREDIENTS 5 tablespoons of natural peanut butter (if your school is “Nut Free”, use tahini) 4 tablespoons of honey 1 tablespoon of cacao 1/2 teaspoon of vanilla extract 3/4 cup coconut 2 cups puffed rice (you can also smash up corn thins) METHOD 1. Mix the peanut butter, honey, cacao and vanilla extract in a bowl 2. Add the coconut and puffed rice 3. Press into a pan lined with baking paper Refridgerate! You can also freeze this one - we pack it frozen in the lunch box for school and by snack time the Choc Puff Bites are perfect! Cut to size - either bite sized nibbles or into bars. page 20
