Healthy LCM bars
in 4 easy steps
We are always looking for healthy travel snacks or lunch box options that actually
taste GOOD! This one is our favourite and is made nearly every week. We love it
because it is super simple with no baking required.
INGREDIENTS
5 tablespoons Natural Peanut Butter *
4 tablespoons Honey
1 tablespoon Cacao (a big one!)
1/2 teaspoon Vanilla Extract
3/4 cup Coconut
2 cups Puffed Rice (you can also smash
up Corn Thins)
* if your school is nut-free, simply add
Tahini. We use 3 tablespoons of natural
peanut butter plus 2 tablespoons of
tahini.
METHOD
1. Simply mix the tahini, peanut butter,
honey, cacao and vanilla extract together,
then add the puffed rice.
2. Get in there with your hands and make
sure all are coated.
3. Press the mix firmly into a tray or cake
tin, then refridgerate.
4. Cut into squares and ENJOY!
