A leavening agent is a substance that causes expansion of doughs and batters by
the release of gases within such mixtures, producing baked products with porous
structure. Such agents include air, steam, yeast, baking powder, and baking soda. In
this class, students will explore these various leavening agents and how they impact
the texture of dumplings, breads, cakes, muffins, and more.

Culinary Arts: Exploring the Five Senses of Taste (Ages 10-13)
In this class, students will learn about sweet, sour, bitter, salty, and umami
through different techniques for preparing proteins, baked goods, and pastry
items. Techniques covered will include roasting, grilling, sautéing, poaching, and
frying, as well as the characteristic trait of sweetness and the role sugar plays in
baking, chocolate, and candy making.
