prepare and less than 50 minutes to cook. Grab a 9x5 inch loaf pan and a large bowl and get baking! The ingredients needed are: ★ 1 ⅓ cups of mashed and ripe banana ★ 2 tablespoons of ground flaxseed ★ ⅓ cup of plant-based milk, such as unsweetened almond milk ★ ⅓ cup of melted coconut oil ★ 2 tablespoons of pure ma ple syrup ★ 2 teaspoons of pure vanilla extract ★ ¼ cup plus 2 tablespoons of coconut sugar ★ ½ cup rolled oats ★ 1 teaspoon baking soda ★ ½ teaspoon of baking powder ★ ½ teaspoon of fine sea salt ★ 1 ½ cups of light/white spelt flour Directions: 1. Preheat the oven to 350 degrees Fahrenheit and spray your loaf pan with oil 2. Using your large bowl, combine the mashed bananas, ground flaxseed, plant-based milk, melted coconut oil, maple syrup, and vanilla 3. Stir coconut sugar, oats, baking soda, baking powder, salt, and flour into the large bowl with the wet ingredients, one-by-one in the order listed 4. Pour dough into loaf pan and spread evenly. (You can add toppings such as sliced banana and/or chopped walnuts to your bread) 5. Bake the loaf, uncovered, for 45 to 55 minutes (until lightly golden and firm on the top) 6. Once finished baking, let the loaf cool 7. Once cooled, enjoy your banana bread! You can try spreading vegan butter or coconut oil on top.
