6 apples, peeled, cored and sliced
6 tbsp packed brown sugar
1 /3 cup granulated sugar
1/3 cup All Purpose Flour
1/2 tsp ground cinnamon
1/4 tsp salt
1 /4 cup butter or margarine
1/2 tsp grated lemon rind
6 tbsp Whipping cream
Line a 9-in (23 cm) pie plate with pastry.
Combine brown sugar and granulated sugar, flour, cinnamon and salt; mix with apples.
Spread mixture into unbaked pastry shell.
Dot with butter; sprinkle with lemon rind.
Pour cream over top.
Cover with top crust, sealing carefully and making slits to allow steam to escape.
Bake in 450°F (230°C) oven for 10 minutes; reduce heat to 350°F (1 80°C) and bake for 30 - 35 minutes or until apples are tender.
