BAKED OYSTERS MOSCA STYLE

(Mosca's is a little dive of a restaurant near New Orleans that has the BEST food!)

2 pints oysters (app. 48) w/ 1/2 cup oyster juice

3 TBSP butter, cut into small cubes

3/4 cup breadcrumbs

3 TBSP chopped Italian parsley

1/4 cup extra virgin olive oil

1 TBSP chopped garlic (or to taste - I always add more)

4 TBSP chopped mixed herbs, such as rosemary, thyme and sage

1/4 cup freshly grated parmesan or grana cheese

1 TBSP red pepper flakes (I always add more)

salt and pepper

1. Preheat oven to 450 degrees.

2. Pour oysters into a bowl and check for bits of shell.

3. Butter the bottom of a 8" or 9" pie plate. Place oysters and oyster juice in pie plate.

4. Except for the butter, mix the breadcrumbs with all the remaining ingredients and distribute evenly over the oysters, patting the breadcrumbs down a bit.

5. Sprinkle the chopped butter on the breadcrumb mixture.

6. Place pan in the oven and bake for about 15-20 minutes. The bread crumbs should become brown and the oyster juice bubbling. Remove from oven and serve immediately.
