Artisans favorite Thanksgiving recipes

ROASTED SWEET POTATOES WITH CHIVES

1.5 – 2 pounds of sweet potatoes, peeled and cut into 1.25” cubes

4-6 shallots, peeled

2 Tablespoons of melted butter, vegetable oil, olive oil or a combination

Salt and ground pepper

1 Tablespoon snipped fresh chives

· Heat oven to 400 degrees F

· Spread cubed sweet potatoes and shallots in a roasting pan large enough to hold them without crowding. Toss sweet potatoes with butter and/or oil and sprinkle with salt.

· Roast for 45-50 minutes, stirring and shaking potatoes and shallots every 15 minutes, until tender and browned.

· Take from oven and sprinkle with pepper; taste and adjust seasonings. Add chives and toss. Serve hot or at room temperature.

*** I sometimes will add whole, unpeeled cloves of garlic to the mixture during the last 20 minutes of roasting.
