#9 SHERRY WINE VINEGAR - $13 BLiS Gourmet By law, Sherry wine vinegar must be aged in oak barrels for at least 6 months in the Spanish province of Cádiz (aka the Jerez Triangle). In addition to that half a year in oak, BLiS’ #9 Sherry wine vinegar is aged for at least another year in ex-bourbon barrels that were then used to age maple syrup. Are you adding this up? Yeah, well, it’s even better than you imagine. You could easily make an incredible shrub with this barrel-softened vinegar, but Ben and I toyed around with it (as is, in cocktails) in lieu of citrus, and the results were extraordinary. These complex layers (caramel, vanilla, orange, and toasted nuts) could never be achieved with fruit acid alone. BULL RUN BARREL AGED BITTERS $22 The Bitter Housewife The Bitter Housewife barrel finishes their Aromatic Bitters in Bull Run Distilling Company’s American Whiskey barrels: a 7+-year-old whiskey, aged in used bourbon barrels. These barrel-seasoned aromatic bitters are heavily scented with vanilla and baking spices, and walnut and its tannins definitely come through on the tongue. CROWN OF THE VALLEY By Benjamin Carpenter 1 ½ oz. Kings County Distillery Barrel Strength Bourbon ½ oz. Kronan Swedish Punsch ½ oz. Amaro CioCiaro ½ oz. Dry Vermouth 1 bar spoon BLiS #9 Sherry wine vinegar 4 dashes of Five By Five Tonics Co. Barrel-Aged Vanilla Bitters Add all ingredients to a mixing glass and stir with cracked ice to chill; strain into a chilled coupe. Garnish with a maple candy. THE ARRAN MALT SAUTERNES CASK FINISH - $75 Isle of Arran Distillers Arran ages this single malt for 8 years in ex-bourbon casks before its sees the inside of a second barrel— Sauternes wine casks from an artisan producer in Bordeaux. Sauternes grapes have been exposed to noble rot, a “good” fungus that produces a sweet, concentrated wine. The Sauternes cask and the spicy, un-peated whisky lace together a perfume of dried pear, banana, beeswax and vanilla, and smacks of cinnamon raisin cookies. This is so lovely. Noble rot on!
