THATCHER’S REVENGE
Makes 1 drink
6–8 oz. Scotch-style ale
¾ oz. persimmon-brown sugar syrup*
4 dashes chai tea tincture**
In glass of choice, pour ale and add syrup and bitters. Stir and enjoy!
*Instructions for persimmon-brown sugar syrup: In saucepan, combine 1 cup water, 1
cup brown sugar, and 1 cup diced persimmon. Bring mixture to a boil then let simmer
for 30 minutes. Strain and use.
**Instructions for chai tea tincture: Fill an 8 oz. mason jar half full with loose leaf chai
tea. Fill the jar with brandy, seal, and let sit for at least 2 weeks. Strain and transfer to a
dropper bottle.
For a bit more of a winter kick, try adding 1 ½ oz. of Scotch. The same amount dark
Jamaican rum will pull this libation in a wonderful tiki direction as well.
