Cafe Flora has been an icon of Seattle
dining for the last 25 years. Back in a time
when impersonal vegetarian cafeterias
and tamale pies were too often the most
one could expect from vegetarian dining,
Cafe Flora showed Seattle that it was so
much more. Nat Stratton-Clarke got his
start under the original Cafe Flora own-
ers; then bought them out in 2016 when
they decided to move on. Now this place
that always served beautiful and delicious
food has intensified its focus on locali-
ty through farmer and forager relation-
ships. You can be assured that when you
dine at Cafe Flora, you will experience the
bounty of Washington state.
NAT STRATTON-CLARKE
Stratton-Clarke has been kind enough
to share one of Cafe Flora’s most sought
after recipes: Lentil Pecan Pâte. After
the restaurant changed hands, Strat-
ton-Clarke quickly learned that this was
one menu item that would be sticking
around for the duration.
