I HAD NO IDEA HOW LACKLUSTER THE CORNMEAL AND GRITS I WAS USING WERE UNTIL I STARTED PLAYING AROUND WITH GEECHIE BOY MILL’S FLAVORFUL GUINEA FLINT GRITS ($12) AND GUINEA FLINT CORNMEAL ($10). MADE WITH A REVIVED VARIETY OF THE CLASSIC SMALL COB, SHORT SEASON, YELLOW-ORANGE CORN CALLED CUBAN FLINT. APTLY NAMED AFTER THE ISLAND WHERE IT ORIGINATED, GUINEA FLINT CORN EVENTUALLY FOUND ITS WAY TO THE AMERICAN SOUTHEAST IN PRE-COLONIAL TIMES. HOW A CORN THIS FLAVORFUL FELL OUT OF FAVOR IS BEYOND ME, BUT I’M SO GLAD SOMEONE SAW TO RESURRECTING IT. I SEE A FUTURE WITH A LOT OF SHRIMPS AND GRITS, JOHNNYCAKES, HUSHPUPPIES, AND CORNBREAD. CAST IRON SKILLETS ARE INDISPENSABLE, AND IT’S UNLIKELY THAT YOU’LL STEP FOOT INTO ANY KITCHEN THAT SEES ITS FAIR SHARE OF CORNBREAD, FRIED CHICKEN, CATFISH, AND BACON AND NOT SEE A VERSION OF THIS WELL-SEASONED, MUCH-LOVED PAN.
