effervescent in all those ways that beer is. So much better than drinking a coke. So, I occasionally go there for that, but when I am drinking beer, Hoppy Poppy is a really cool, hoppy IPA. They always have a lot of rotating taps and something on nitro. The other great new thing in town is the Apiary, which is all mead and cider. They have some incredible wild apple ciders--really tart and alive--and do a lot of experimenting with local herbs and like flavor combinations. Their meads are just fantastic. I used to live kind of near a creek, and I would make beer. There was I think just enough ambient whatever in the air. I was having trouble getting a clean batch. There were always some inadvertently Belgian flavors in there. Accidentally Trappist! Ha ha! A lot of breweries get good money for those accidental flavors these days. I was getting those in, and I wasn’t totally happy, so I started making mead because nobody knew what mead was supposed to taste like 15 to 20 years ago.
