Simple Syrup 1 dash Angostura Bitters 1 Egg White Beaujolais Nouveau Add all ingredients, save for the Beaujolais, to a shaker and shake very hard for about 15 seconds. Strain the cocktail into a rocks glass filled with the largest ice cubes you have. Allow the cocktail to rest for one minute. Then float the Beaujolais in the drink by cautiously pouring 4-5 bar spoons full of the wine onto the ice in the center of the cocktail.
