ZIRBENZ STONE PINE LIQUEUR OF THE ALPS • $42 The fresh pine cones needed to make this liqueur come from the Arolla Stone Pine, a rare pine tree found only in the Alps. In July, mountaineers hike into the hills and climb to the treetops (it’s like the X Games of foraging) to harvest this fruit before it matures into what we know as a pine cone. Since it can take over 30 years for a tree to produce fruit and five to seven years between sub- sequent harvest cycles, only 15 to 20% of this pine’s wild red fruit (Arolla Stone Pine bears red cones, not green!) is picked to safeguard the species.
