FALLING BARK FARM HICKORY SYRUP • $14 There’s nothing I wouldn’t put Fall- ing Bark Farm Hickory Syrup on or in … cocktails, barbecue sauce, coffee, French toast … just keep a steady sup- ply coming, but making this smoky syr- up is no simple task. In fact, it’s pretty labor intensive, especially for a couple that was just looking to generate some revenue after retirement. To start the bark has to be collected—by foraging or donations from industries that work with hickory but don’t have a use for the bark—cleaned, toasted, cooked down in turbinado sugar to infuse its flavor, filtered several times, and then bottled. It’s exhausting just thinking about the amount of work that Falling Bark Farm founders Joyce and Travis Miller do to produce their extraordi- nary syrup, and I haven’t even men- tioned their honey products or the col- laborations the Millers are doing with distillers and coffee roasters.
