It's Alive! • After the incubation is complete, the bags are moved to a fruiting room where they're introduced to humid conditions in cooler temperatures • In the case of Oyster and Lion's Mane mushrooms, a slit is cut in the side of the bag, which the mushroom fruit will begin to emerge from about a week later • In the case of Shiitake, the entire bag is removed from the block of sawdust and the Shiitake mushrooms will grow from all sides of the block over the next week Another area of importance for the folks at Sparta is their environmental impact. Of course, as a certified organic operation, they don’t use chemicals of any sort in their process. They also use drip irrigation and sheet mulching to mitigate their footprint as well. Perhaps one of the most important things they do is compost all of the waste and send it across the street to the Elm Street Garden to continue the cycle. From the preparation of the sawdust to the preparation of a grilled mushroom and cheese sandwich, Sparta Mushrooms seems to be doing it right.
