5 Medjool dates, pitted and soaked in 1 cup water for 20 minutes 1 1/2 cups All-Purpose Gluten-Free Flour Mix (see below) 1/2 cup gluten-free rolled oats 1/4 cup applesauce 1/4 cup Sunflower Seed Butter (see below) 2 tablespoons coconut sugar 1/4 teaspoon sea salt FILLING 10 fresh Black Mission figs, cut into quarters 1/4 cup coconut sugar 1 teaspoon finely chopped fresh rosemary 1 teaspoon gluten-free vanilla extract TOPPING 3 tablespoons coconut milk 2 tablespoons coconut sugar Must Do 1. Preheat the oven to 350°F. Line a 15 × 13-inch baking sheet with parchment paper. 2. To make the crust: Drain the dates and reserve the soaking water. 3. Add the dates, flour, oats, applesauce, sunflower seed butter, coconut sugar, and salt to a food processor. Pulse to combine until the mixture has a crumbly consistency. While the machine is running, add the reserved soaking water, 1 tablespoon at a time, until the dough comes together and is very smooth and moist, about 5 tablespoons. 4. Form the dough into a ball and divide it into 4 equal pieces by cutting it in half and then in half again. Form the 4 pieces of dough into balls and place them on the prepared baking sheet. 5. Press down the dough balls with your hands to make flat circles that are about 5 inches wide and 1/4 inch thick. 6. To make the filling: Add the figs, coconut sugar, rosemary, and vanilla to a medium bowl, and stir to com- bine. 7. Place the fig mixture in the middle of each of the disks, dividing it evenly, and leaving about a 1/2-inch bor- der around the perimeter. Fold over the dough border, or just pinch the dough up to create a rim. 8. To make the topping: Brush the dough rims with the coconut milk. Sprinkle the coconut sugar around the rims and a little on top of the figs. 9. Bake the galette-lets until the rims are golden brown, about 20 minutes. 10. Transfer the baking sheet to a wire rack, and let it sit for about 10 minutes. Serve immediately or at room temperature. 11. Keep in an airtight container for up to 3 days, or wrap individually and freeze for up to 3 months.
