While everyone else is enjoying their regular macaroni pie and stewed chicken, here’s where you stand out! Whether you wish to cook together or if you simply want to surprise your guy or girl, this recipe is simple and spectacular…and unique just like your relationship. You can even pair this meal with green beans or nuts, depending on your preferences. From preparation to completion, this meal takes under one hour!

What you’ll need:

1.5 cups water

1 cup uncooked Basmati rice, rinsed and drained

.75 lb plums, pitted and chopped

0.5 medium red onion, minced

1 hot pepper, minced skin only

3 tablespoons minced fresh cilantro

1 teaspoon sugar

.75 lb boneless, skinless chicken breast

2 teaspoons fresh rosemary, minced

Salt and pepper to taste

2 teaspoons olive oil

Directions:

Place water into a medium saucepan and stir into rice. Bring to a boil. Cover, reduce heat and simmer for 20 minutes. Remove from heat, cool slightly and fluff with a fork.

In a medium bowl, combine plums, onions, peppers, cilantro and sugar and mix well. Cover and refrigerate for about 30 minutes.

Season chicken with fresh rosemary salt and pepper.

Heat oil in a large skillet over medium-high heat. Place chicken breasts into hot oil and brown about 1 minute per side. Reduce heat to medium and cook chicken about 5 minutes per side.

Serve over rice with plum salsa!
