Derbyshire Honey and
Lemon Curd
Ingredients
4 Lemons
4oz Butter
454g Clear Derbyshire Honey
4 Eggs
Method
1. Grate lemon rinds and squeeze and strain juice.
2. Put into double saucepan with butter and
honey.
3. Beat in 3 of the eggs and separate the 4th egg
and add its yoke, strain them into the mixture,
cook and stir over a gentle heat until thick and
creamy.
4. Pour into hot jars and cover.
Note: This will keep for 2 months.
