Pepper fried rice

The best fried rice was yesterday's boiled rice. Now that leaves us with a number of problems, not the least of which is the fact that if the rice is not cooked properly the second time around it can be quite dangerous to eat.

But please don't be put off, all fried rice is the same, and is perfectly safe if cooked correctly. Basically it is a matter of making sure the rice is hot - really hot and this will give you not only perfect fried rice, but very safe fried rice.

For this recipe, which you can change around as you please, you need an assortment of peppers, and it's up to you about their heat. Personally I am a bit of a wimp when it comes to hot spice - I am getting used to it a little, but I don't like heat for its own sake.

Try this with some ginger grated into the mix, or add some French beans or other vegetables for both colour and texture.

Ingredients

A selection of peppers, hot or not.

2 cloves garlic

Juice of half a lemon

A little oil

A little salt

300 g chicken pieces

Simple method

Add all the ingredients except the chicken to the pan with the oil and cook until the peppers are soft and all the flavours are infused.

When the rice is completely hot and cooked, add the lemon juice and mix.

Add the chicken and mix well with the flavours.

You can add an egg into the mix, or even 2, one to coat the rice, one to cook as strands of egg.

Serve hot or cold.
