Managing Director Andrea Tiwari is the third generation to step into the kitchen at Bindy's, where
she uses the secrets of Caribbean cuisine passed down by her father and grandmother. Jerk refers
both to a spice blend and cooking technique for meat which traditionally includes slow-smoking
and grilling over wood. The result is smoky and spicy, accented by a piquant mix of chile pepper,
paprika and ginger.
