PRO TIPS
Barbeque is all about going big: giant slabs of meat, intense smoky flavours,
a slathering of sauce. And yet the best BBQ can be found in a small strip mall
on Marion St, at Lovey’s BBQ. The key to stellar flavour is the enormous wood
fired smoker, which is loaded up with 500 lbs of meat per night. For home cooks
without industrial smokers, cooking low and slow in a closed barbeque imparts
the signature taste—juicy meat, pure smoky flavour, and just a little tang of
barbeque sauce.
