Chicken Wings Imitate wood smoked flavour at home by cooking these delicious wings on the grill. INGREDIENTS 2 1/2 cups paprika 10 Tbsp brown sugar 10 Tbsp white sugar 10 Tbsp kosher salt 5 Tbsp black pepper 10 tsp cayenne pepper 10 tsp dry mustard 10 tsp garlic powder 10 tsp onion powder 2 lbs chicken wings METHOD 1. Combine all ingredients except chicken wings and rub over wings. 2. Turn on one side of a barbeque, leaving the other side off. Put wings on the unheated side (can be put in a foil pan for less mess). 3. Cook for 1 1/2-2 hours, until wings are cooked through. Toss with your favourite barbeque sauce. Yield 2 lbs chicken wings Winging It Owner Roger LeBleu • Lovey’s BBQ PRO TIPS Barbeque is all about going big: giant slabs of meat, intense smoky flavours, a slathering of sauce. And yet the best BBQ can be found in a small strip mall on Marion St, at Lovey’s BBQ. The key to stellar flavour is the enormous wood fired smoker, which is loaded up with 500 lbs of meat per night. For home cooks without industrial smokers, cooking low and slow in a closed barbeque imparts the signature taste—juicy meat, pure smoky flavour, and just a little tang of barbeque sauce. ciao! / june/july / two thousand seventeen 23
