RECIPE INSPIRATION Chef Kumar and his wife been restaurant owners for more than 30 years , with India Palace in its current location on Ellice Avenue for more than 20 . While he has delegated most of the cooking to a new generation of chefs , this hands-on restaurateur still works in the kitchen as needed . There he crafts the restaurant ' s colourful curries , like this signature chicken bhoona , which gets its unique flavour from chatt masala , and vegetarian specialty palak paneer .

INGREDIENTS 2 Tbsp oil 1 onion 1 / 2 tsp turmeric 1 tsp paprika 1 / 2 tsp cumin powder 1 / 2 tsp coriander powder 2 chicken breasts , cut into pieces 1 green pepper , chopped 8 mushrooms , chopped 1 large tomato , chopped chatt masala , to taste kasuri methi , to taste salt and pepper , to taste
METHOD 1 . Heat 2 Tbsp oil in a pan over medium heat . Sauté onion with turmeric , paprika , cumin , and coriander until golden . 2 . Add chicken , pepper , mushrooms , and tomato and cook for 10 minutes . 3 . Season with chatt masala , kasuri methi , and salt .
