My wine journey began with an up close and personal cellar dinner at Bergkelder Mountain Cellar and a beautiful glass of Sauvignon Blanc . Sipping on Fleur de Cap wines I learned how important bush vines are in South Africa ( un-trellised or trained vines producing the perfect amount of grapes according to its own tempo ). Over a detailed and dynamite cellar dinner with perfect wine pairings , Chef Craig Cormack taught us about the pure essence of ‘ salt health ’ and why salt is a lifeline mineral to staying healthy . Taking all the notes I could , I knew this trip was going to be one of the most memorable of my entire life .
