Sweet Potato Mash

Ingredients :
• 4 - 5 medium-sized sweet potatoes ( The more color and the darker the color , the more nutrients .)
• 2 medium-sized shallots
• 1-1 / 2 cups of Half & Half
• 1 / 2 cup of butter
• Salt & pepper to taste
Instructions :
• Peel and chop shallots .
• Place sweet potatoes and shallots in a large pot of water and bring to a boil . You can add salt to the water , but it really doesn ; t make it boil that much faster . Cook until tender ... about 20 minutes .
• Remove from stove and pour water , potatoes and shallots into a colander .
• Return to pan or large bowl and mash with a hand masher or an electric mixer . ( Remember to pull your hair back .)
• Add Half & Half , butter , and salt & pepper to taste .
• Mix until the mixture is the consistency that you like best !.
• Yum yum !
Ingredients :
• 4 small Persian cucumbers
• 4 - 5 Cocktail tomatoes
• 1 medium-sized Ruby Red grapefruit
• 5 - 6 kumquats

Summer Salad

Instructions :
• Slice cucumbers , quarter tomatoes , peel and cut chunks of grapefruit , and finely slice kumquats .
• Mix all ingredients together and place into serving dish or bowl .
• Drizzle with Grapefruit Balsamic Reduction Sauce .
