VEGGIE PACKED PIZZA ROLLS What kid doesn't love pizza? You pack it with cheese, and they will never know that you have included vegetables. Here's a simple veggie pizza roll recipe that will have your kids smiling all the way to health. This recipe was adapted from INGREDIENTS 1 lb pizza dough 2 cups of red bell peppers, chopped 1 small onion, chopped 1 cup of green bell pepper, chopped 3 tablespoons of olive oil 1 to 2 cups of mozzarella, shredded 6 oz of pepperoni, chopped Salt and pepper to taste INSTRUCTIONS 1. Saute your bell peppers and onions in the olive oil until the onions are translucent, and the bell peppers are softened.  2. Cool vegetables, and then mix with the cheese and pepperoni. 3. Add salt and pepper to taste. 4. Roll out your pizza dough to about 14 inches long and 6 inches wide. 5. Spread the filling to cover the dough. 6. Roll up and slice into 12 slices. 7. Add to greased cooking sheet or muffin tins. 8. Bake at 400 degree Fahrenheit for approximately 20 to 25 minutes.
