BROCCOLI & POTATO CASSEROLE What kid doesn't love cheese? They love it so much they will eat broccoli if you smother it in a cheesy sauce or anything that resembles it. Try this broccoli and potato casserole  to get your kids to devour their vegetables. INGREDIENTS 1 lb of potatoes, cubed 1 head of broccoli – cut into  bite sized pieces 1 green bell pepper, chopped 1 to 2 cups of the cheese sauce of your choice (enough to spread all over your casserole)  1 tsp of basil 1 tsp garlic salt and pepper to taste INSTRUCTIONS WE HELP YOU GET WHAT YOU NEED IN LIFE. 1. Preheat Oven to 400.  2. Bake potatoes for 20 minutes on a greased baking sheet. (Heat the greased cookie sheet for a few minutes to prevent sticking.) 3. Blanch broccoli in boiling salty water for a few minutes. Drain and set aside to cool. 4. Lightly oil a casserole dish with vegetable oil or another oil of your choice. 5. Layer your potatoes, then  add the broccoli.  6. Cover with cheese. Continue to layer. Top with remaining cheese and breadcrumbs. 7. Bake for 50 minutes. Let cool.  *Original Recipe: CEOMOM   |   31
