What’s the best way to plan how to go
about a gravity defying cake?
Again finding lots of pictures of the
subject matter, also sketching a design
and deciding if the cake will need an
internal support or structure.
What are your best tips for ensuring the
structures is completely food safe?
Use food safe products. For example
water pipes from a hardware store.
What utensils do you like to use to
carve your cakes? Do you find some
knives work better than others? Do
you use a special utensil for intricate
details?
We’ve got a set of Antony Worrall
Thompton knives. That ranges from a
meat clever to a paring knife although
we’ve never used the meat clever to
carve a cake yet, never say never!!
What is the best advice you can offer
cake decorators who want to attempt a
sculpted cake?
Lots of planning, as the old saying
goes
Rewind to 2010 in the town of Derbyshire, England, cake decorator Jamie Brooks was
busy creating incredible cakes for his family and friends. What he didn’t know was
that his love for decorating would progress into a successful family owned and operated
business known as The Mirage Cake Company.

Last year The Mirage Cake
Company took the plunge and
expanded their business vision
by opening a shop front and they
haven’t looked back. Since then
they have taken out a number of
prestigious accolades including
two gold awards at London
Cake International. They’ve also
launched a YouTube channel in a
bid to showcase their outstanding
work with their followers.
The Mirage Cake Company has a
love for designing gravity defying
and sculpted cakes due to their
spectacular wow factor. They let
the Australian Cake Decorating
Network in on some of their secrets
to help you get your cakes looking
realistically mind blowing.
What’s the secret to creating a
perfectly sculpted cake?
Get many pictures you can of the
object your going to sculpt.
For example, for our roast chicken
cake I got lots of pictures of the subject
matter and I chose which one I wanted
to replicate (colour wise) and then
chose the best method to achieve that
result, that particular cake was hand
painted.
If you wanted to create a sculpted
cake such as a car, how would you go
about it?
For most vehicles and cars you can get
blue prints off the internet and scale
it down accordingly. This is what the
Mirage Cake Company does.
