WHAT? QUESTIONS, PHOTOS BY TRACY GOLDIZEN 20 BUSINESS PEOPLE AS A CHILD, WHAT DID YOU WANT TO BE WHEN YOU GREW UP? Lindsey: When I was growing up, I didn’t think much past just wanting to be a good wife and mother. Scott: A firefighter. WHAT DO YOU ACTUALLY DO AT YOUR JOB? Lindsey: I take care of the day-to-day opera- tions of the restaurant. I make sure everything is running smoothly. Scott: I sit at my desk. HOW LONG HAVE YOU BEEN THERE? Lindsey: I have worked for the Canteen for just under three years. Scott: Three years as an owner, a lifetime as a customer. WHAT INSPIRED YOU TO RUN A LANDMARK RESTAURANT? Lindsey: I jumped on board when Scott came to me and told me that he was working on buying the Canteen. He wanted me to join him because of my experience in restaurants. What I didn’t know at the time is how much this job would cause me to fall in love with Ottumwa, and its history, even more than I had before. Scott: It has always been my dream to own the Canteen. WHAT PART OF YOUR JOB DO YOU ENJOY MOST? Lindsey: I love that every person that comes through the door has their own story about why they love the Canteen and how it brings them closer to their fond memories of family and community. Scott: Being around the ladies that work at the Canteen. WHAT ARE YOUR FAVORITE CANTEEN TOPPINGS? Lindsey: Cheese everything but onion with extra pickles is my favorite Canteen. Scott: Mustard, onion, moist. WHAT IS THE MOST DIFFICULT PART OF YOUR JOB? Lindsey: Making sure the Canteen lives up to everyone’s expectations. Scott: Keeping all of the old equipment up and running. WHAT’S YOUR FAVORITE KIND OF PIE? Lindsey: Pecan pie is my favorite. Scott: Coconut and apple. HOW MUCH MEAT DO YOU GO THROUGH IN A DAY? HOW MUCH FOR THE CONTEST? Lindsey: We go through, on average, 150 pounds of Certified Hereford Beef per day. In 2017, we went through 48,000 pounds. For the contest, we prepared 270 Canteens. WHAT IS YOUR FAVORITE THING ABOUT OTTUMWA? Lindsey: My favorite thing about Ottumwa is its people. Scott: It’s my birthplace and I love the city. CANTEE
