CUMIN SCENTED GRILLED CHICKEN

INGREDIENTS
4 (6 oz) chicken cutlets
2 tablespoons ground cumin
1 teaspoon turmeric
Kosher salt and ground black pepper
2 teaspoons olive oil, divided
METHOD
Season chicken with cumin, turmeric, salt and pepper.
In a 10-inch nonstick pan, heat 1 teaspoon olive oil
on medium-high until almost smoking. Carefully place
chicken in pan. Sear in pan 4 minutes. Turnover and
cook 3-5 minutes until done. Repeat process with
remaining salmon.
Tabbouleh
INGREDIENTS
2 bunches curly parsley, chopped
1 bunch mint, chopped
1 small red onion, diced fi ne
1 red bell pepper, diced fi ne
1 large tomato, diced fi ne
1/4 cup extra virgin olive oil
2 lemons, juiced
Kosher salt and ground black pepper
1/2 cup bulgur wheat
METHOD
In a mixing bowl fold together fi rst 7 ingredients.
Season to taste with salt and pepper. Fold in bulgur
and chill until needed
