Prayers of thanks and special thanksgiving ceremonies are common among almost all religions after harvests and at other times. The Thanksgiving holiday's history in North America is rooted in English traditions dating from the Protestant Reformation. Thanksgiving also has aspects of a harvest festival, even though the harvest in New England occurs well before the late-November date on which the modern Thanksgiving holiday is celebrated. Now Thanksgiving is a time for families to gather, to share old recipes and welcome those who may not have family to join in our festivities. This month I have provided recipes to a couple of side dishes.

Stuffing verses Dressing (as a former professional chef, I strongly recommend not to stuff the turkey, just place butter and herbs inside the turkey instead and make a dressing and serve on the side, due to certain health issues)

A Giblet Dressing

Take the meat package that comes with the turkey and place in a pot with

3 cups water bring to a boil then add

1 tsp of sage

1/2 cup garlic

1 cup onion

1 cup celery

Salt and pepper to taste

Cook for an hour or until meat separates from neck bone, save the liquid, remove the meat chopping to small pieces. Preheat oven to 350 degrees. Add meat and dried herb stuffing mix 2- 8 ounce packages to the remaining liquid, place into a buttered 9 x 13 pan and place into the oven for 30 minutes.

Garlic Cream Cheese Mashed Potatoes

Pull out 3 packages of cream cheese to soften

Peel a dozen potatoes, cut place into boiling water, cooking until soft.

Drain off as much of the water as possible and add 2 cups of milk (more if you think you need it) instead

Add cream cheese, 1 cup of butter, ½ cup of minced garlic and beat until smooth and creamy.
