POPPY’S FAMOUS
LEMON CAKE
THIS DELICIOUS LEMON CAKE IS MENTIONED THROUGHOUT THE FORGOTTEN PEARL.
Ingredients
LEMON BUTTER
1/2 CUP LEMON JUICE
1 CUP SUGAR
2 EGGS LIGHTLY BEATEN
125 GRAMS BUTTER
SHORTCAKE BASE
2 CUPS SELF-RAISING FLOUR
1 CUP CASTER SUGAR
125 GRAMS BUTTER, SOFTENED
2 EGGS LIGHTLY BEATEN
Method
LEMON BUTTER
Place lemon butter ingredients in small saucepan.
Stir constantly to melt butter.
Whisk over low heat until mixture boils and thickens
slightly
(approximately 10 minutes).
SHORTCAKE BASE
Preheat oven to 160ºC.
Rub butter into flour and sugar.
Mix until resembles fine breadcrumbs.
Make a well in centre, add eggs and mix to form stiff
dough.
Press 2/3 mixture into cake tin.
Pour over hot lemon butter, then crumble remaining
dough over lemon.
Preparation
Bake about 45 minutes or until golden.
Cool in tin.
Dust with icing sugar.
