[email protected] Red Lake Rainbow Trout Once again, I find myself in northern Minnesota about 100 miles from the Canadian border. We take the motorhome here to visit my wife Laura’s mom and dad. Recently I’ve had the opportunity to go fishing on the Red Lake Indian Reservation Rainbow Trout: ½ cup yellow mustard ½ teaspoon Crystal hot sauce 1 teaspoon freshly squeezed lemon juice ¼ cup beer 2 filets per person Fish fry Peanut oil Shep’s Puppies: 1 cup Martha White self-rising flour 1 cup self-rising corn meal 1 can Pride cream corn (14 ounces) 1 bunch green onions, chopped 1 egg 1 jalapeno, seeded and finely chopped (optional) Tartar Sauce: ½ cup dill relish 2 teaspoons freshly squeezed lemon juice ½ teaspoon Tony Chachere’s Creole seasoning 1 tablespoon minced onion ¼ teaspoon Sriracha hot chili sauce August 2016 www.marshandbayou.com (the Chippewa Indians). As you can imagine, there are lots of beautiful lakes, and we fished for rainbow trout. I fished with Dr. Bob Thompson and our First Nation Indian guide, Darwin Sumner. Well, we caught a bunch and they filleted great. Beautiful, delicate, white meat filets. What better way to eat than Southern fried? North meets South! I love my homemade tartar sauce, which I learned from my dear friend, Chad Perriloux. The actual recipe for frying I picked up from Bobby Beroular, a fishing guide in Lafitte. As expected, these trout fillets go great with Shep’s Puppies (hush puppies), and I’ve included the recipe again. In a large bowl, mix well the first four ingredients. Add fish filets and let marinate for 30 minutes. Take out filets and thoroughly coat with fish fry. Quickly drop into 350-degree peanut oil and fry till golden brown. Drain on a paper towel. Serve right away with Shep’s puppies. Preheat oven to 200 degrees and oil to 350 degrees. Mix all ingredients together in a large bowl. Drop a small spoonful into the fryer. Fry about 12 at a time. Puppies should flip over when the first side is done, if not help them. Shep’s Puppies will not be happy unless cooked on exactly 350 degrees. Don’t make them sad! Place on plate with paper towels and place in 200-degree oven until ready to serve.Eat today, diet tomorrow!
