He always has a seasonal torta on the menu for those who
prefer more of a sandwich-type dish. They toast it and
usually add some kind of cheese and smear. They recently
started serving up top-notch tacos every Tuesday to
celebrate Taco Tuesday.
You can’t visit Zona Blanca without ordering Chef White’s
signature “Dorilocos” to snack on. Everyone has to try
this umami flavor bomb at least once in their life. The
“Dorilocos” is inspired by Mexico City. In the culinary
world there are five flavors: smokey, salty, spicy, sour, and,
can you guess the fifth? Umami. This is what they call
“the fifth taste bud.” It is that addictive flavor you taste in
a really fine chocolate or caviar. It is also found in MSG;
hence the Doritos. This dish is composed of gummy bears,
fried Japanese peanuts, and … don’t ask what the protein is
until you have finished. It’s much more fun that way.
You must be 21 or older to eat inside, but anyone can call
and order ceviche for take-out.
