CAREE R T RA I N I N G PROGRA MS Culinary Arts Academy 2015-1 6 STATS: 128 Students Served 91 % of students earned industry-specific certifications 19 18 This program offers culinary arts courses including a fundamentals program, baking and pastry arts, and international cuisines. The fundamentals class focuses on sanitation and safety, knife skills, measurements, and core cooking methods. As part of the fundamentals course, students are prepared to pass the ServSafe Certification exam. Baking and pastry arts provides the opportunity to master the basics of baking including breads, cakes, pies, chocolates, and custards. International Cuisines is an advanced course that prepares students to work in a variety of service styles while employing global ingredients, flavors, and cooking methods. As a result, students gain experience with the timing and synergy necessary to be a core team member of any kitchen. There are also relevant pathway classes that cover subject matter and vocabulary related to hospitality.
