I had always wanted my own bancà. As a 12-year old kid in the coastal city of Iligan in Lanao, spending the weekend with the clan was a ritual. The local fisherman always lent me their 10foot bancà and from that I learned to surf the waves using a Pinoy canoe with an outrigger. Of course I sank the bancà heaps of times, and that was part of the learning. The kabò was always there to bail it out anyway, so it wasn’t a big deal. The fun part was getting to the Waterfront where, every Saturday, craftspeople put up their stalls and you can get knick knacks. And every first and second Saturday, the farmers markets popped up. Being a lover of chilli, the first sauce that jumped at me was the Red Belly Chilli Tomato Jam at the Tar10 tent. Lyn and James were very obliging and short of spoon feeding me, led me to the flavours that I wanted after I said, “take me to your chilli!” Rubbing shoulders as I walked through the crowd, I was not quick enough with my camera as a giant, hip high, black dog walked past me, parting the crowd. Next thing I know, I was in front of the Paella tent! The chorizos and prawns and mussels immediately made my mouth water.
