Ingredients: 450g pumpkin, peeled and sliced 8 slices of bread,cut thick [2cm] 57g sugar 57g butter 4 tsp ground cinnamon A little extra butter Method: Preheat oven to 150C Butter both sides of the bread. Mix together the sugar and cinnamon. Grease an ovenproof dish. Place a layer of bread in the dish Follow this with a layer of sliced pumpkin. Sprinkle liberally with the cinnamon sugar mixture. Repeat, with alternating layers of bread and pumpkin, until the bread and pumpkin have been used up. You must ensure that you end up with a layer of pumpkin slices on top. Dot the top layer of pumpkin with the extra butter. Place in oven and bake until the pumpkin is soft. Serve the Pumpkin and Bread Pudding hot. Pumpkin and Bread Pudding is a favourite traditional South African dessert, once you've tasted it you will understand why.
