here is something about the allure of summer fresh food.
By this time of year, I am more than ready to move beyond
the comfort foods of winter and to shed the layers of chili, stews
and homemade macaroni and cheese for lighter fare. When I
think of summer I can smell fresh basil, mozzarella and juicy
ripe tomatoes used to make a summer classic, the caprese salad,
almost a meal within itself with some crusty French bread and
a glass of crisp summer white wine. From garden-fresh salads,
simple soups served hot or cold, to savory and sweet salsas,
summer is the time to experiment.
Maybe you’re considering what the next chapter of your life will
look like? Have you ever thought about a new career or fulfilling
a passion? Our reader, Eunie Miller, did just that and at 55 years
young graduated from nursing school and embarked on a new
career that took her all over the country as a traveling nurse. Julie
Leonelli, another 55+ reader, shares with us how a chance meet-
ing for her mother led to her future boyfriend at 80, while on a
pedal powered rail bike ride. Julie explains how many countess
opportunities there are locally, to get outside and exercise and
meet new friends while doing it! Keep the stories coming!
Summer is a state of mind and one that feels free and uninhib-
ited. Longer, sunnier and warmer days make us all happier. Fill
your lungs with air and stop to take in all the magic upon us this
beautiful time of year throughout the Capital Region, from our
beautiful lakes, the thrill of Saratoga Race Track, hiking one of
the many mountains or shopping at a local farm stand, this is
the time of year to breathe it all in.
