Steak Chimichurri Jeff Michael, Head Chef Old Daley on Crooked Lake olddaley.com INGREDIENTS 3/4 cup flat leaf parsley 1/4 cup basil or mint 1/4 cup cilantro 2 Tbs scallions 4 cloves garlic 2 shallots 1 Tbs fresh lime juice 1 Tbs fresh lemon juice 3 Tbs red wine vinegar 1/4 cup EVOO 2 Tbs ripe avocado 1/4 tsp ground coriander 1/4 tsp sea salt NY Strip steak or steak of choice Process the herbs first in a food processor, then add the rest of the ingredients and purée. Set aside. We suggest using a New York strip steak. Rub it with olive oil, salt and pepper, then grill to your liking. Rest for 5-7 minutes before slicing. Pour chimichurri over- the-top, or serve it on the side.
