The­busiest­month­of­the­year,­Peggy­says,­is­December.­She looks­at­sales­for­the­last­three­years­and­averages­them­to­de- termine­how­much­to­make­for­the­current­year.­And­her­aver- ages­are­accurate. “It’s­just­one­of­the­benefits­of­owning­the­business­for­20 years,”­she­says.­“The­history­I­have­here­helps.” In­2000,­Peggy­opened­a­full­espresso­bar.­About­10­years ago,­she­started­serving­gelato.­She­has­grown­and­expanded the­ business­ to­ meet­ her­ customers’­ desires­ and­ is­ looking ahead­to­what­she­might­do­next. In­ addition­ to­ chocolate,­ gift­ baskets,­ coffee,­ gelato­ and fudge,­Peggy­offers­a­number­of­South­Dakota-made­products. Grassland­Gourmet­from­Onida,­owned­by­three­veteran­edu- cators­who­share­a­love­for­nutrition­and­cooking,­has­many products­available.­Everything­from­soup­and­dip­mixes­to­bak- ing­mixes,­cheeseball­mixes­and­dessert­mixes­have­made­their way­into­Mostly­Chocolates.­Dark­Canyon­coffee­is­available both­at­the­espresso­bar­and­for­sale­in­the­store.­Firehouse wines­are­sold­at­Mostly­Chocolates,­taffy­comes­from­Rush- more­Taffy­and­popcorn­is­South­Dakota­popcorn.­Local­cards, magnets­and­other­gifts­are­also­available.­Bonzeye­Studio­has crafted­decals­and­stickers­featuring­the­Black­Hills­and­Peggy also­has­those­for­sale.­She­buys­and­supports­local­as­much­as she­can. She­also­attends­the­Chocolate­Expo­every­year,­both­for­in- spiration­and­to­try­new­products. “The­first­day­is­awesome,”­she­says.­“But­the­second­day you’re­arguing­over­who­has­to­sample­because­you’ve­already eaten­so­much­chocolate!” Tianna­Deschamp­has­been­working­for­Peggy­since­Octo- ber­ 2017­ and­ loves­ coming­ to­ work­ every­ day.­ She­ makes chocolates­for­the­case,­caramel­apples,­caramel­corn­and­more. “I’m­a­creative­type,”­she­said.­“And­I­was­in­banking­be- fore.­I’ve­been­very­happy­to­return­to­this­kind­of­work.­It’s­a creative­outlet­every­day­and­it­doesn’t­feel­like­I’m­even­com- ing­to­work­because­I­love­what­I’m­doing­and­am­just­lucky enough­to­get­paid­to­do­what­I’d­love­to­do­anyway.” She­loves­the­“literal­kids­in­a­candy­store”­and­that­every- one’s­day­gets­better­after­visiting­Mostly­Chocolates.­Her­fa- vorite­ edible­ creation­ is­ the­ dark­ chocolate­ salted­ caramel truffle. That’s­just­one­of­the­many­delectable­truffles­in­the­case. Amaretto,­chocolate­cheesecake,­lemon­chiffon,­espresso,­dou- ble­dark,­hazelnut,­mostly­mint,­kahlua,­oreo­cream­...­the­fla- vors­go­on­and­on.­And­that’s­making­no­mention­of­the­myriad other­chocolates­like­caramels,­meltaways,­turtles,­nut­clusters, marzipan­and­more.­There’s­also­chocolate-covered­nuts,­or- ange­rind,­ginger­and­pretty­much­whatever­suits­your­fancy. “We’re­making­everything­here­in­small­batches,­so­it’s­as fresh­as­it­can­possibly­be,”­said­Peggy.­“And­that’s­what­sets us­apart.” Mostly­Chocolates­is­located­at­1919­Mt.­Rushmore­Road­in Rapid­ City­ and­ is­ open­ from­ 7­ a.m.­ until­ 6­ p.m.­ Monday through­Friday­and­from­10­a.m.­to­5­p.m.­Saturday­and­Sun- day.
