According
to area cake
designers, the
most requested
fashion cakes feature Michael Kors, Tory Birch, Chanel
and, of course, Christian Louboutin.
“It’s fun to create the client’s mostloved bag or high heel into an edible
form of art,” says Jennifer Bunce,
owner and head cake designer of
The Hudson Cakery in Weehawken.
“I love the wow effect and the look
on my client’s faces when I deliver the
cake,” adds Heidi Blanco, creative
designer at Sweet Cake Fetish.
Both Blanco and Bunce note the
cake design process starts with sketch.
“For sculpted cakes like these, we
normally ask for three weeks notice,”
says Bunce.
“A lot of research goes into the
structure, color palette and specifications that each client requests. Blanco
says. “My cakes are all fresh to order
and everything, including the fondant,
is made from scratch and never
frozen.”
