“gavurdagi salad.”
Made with tomatoes, cucumbers,
scallions, red onion,
parsley, fresh mint
and walnuts, each
region in Turkey has
a slightly different
way of making the
salad. In some regions they use garlic, sumac, lemon juice,
sugar and hot green pepper.
“In our recipe, we balance the taste that everybody can eat
and enjoy,” Cinar Turkish Restaurant owner Tunc Ozlu says.
“Green pepper would make the salad hot and spicy. Adding
garlic might make people not want to order it. So, we chop the
vegetables small enough that the dressing will blend at the best
taste. We add the chopped fresh mint and walnut pieces over
the salad. Cinar’s way of making this salad is loved by people
who have tried it in the U.S. We get many compliments, such
as our Cinar Salad tastes better than what they had tasted in
Turkey.”
