Total Cooking Time: 40 Minutes
Serves: 8 Portions
Ingredients
4 quarts water
1/2 teaspoon salt
1/2 teaspoon olive oil
1 pound elbow macaroni
1 stick (4 ounces) salted butter, cut into 8 slices
1/2 cup all-purpose flour
1 cup whole milk
1/2 cup evaporated milk
1/2 cup 40 percent heavy cream
1/4 teaspoon white pepper
1 cup grated parmesan cheese
1 1/2 cup shredded Comté cheese
1 teaspoon white truffle oil
3 cups shredded white cheddar cheese
1/8 cup diced chives
Directions
Preheat oven to 425 degrees. Bring a large stock pot with water
to a boil and add salt, olive oil and macaroni. Cook macaroni to
al dente as instructed on packaging. While macaroni is cooking,
heat a large sauce pan on medium heat and melt butter. Once
butter is simmering, sift and whisk flour into sauce pan, stirring
constantly, until the roux is a golden straw color (do not brown
the roux). Next, slowly add milk,
evaporated milk and heavy cream
