Food and Drink Truffled Mac and Cheese by Pier 115 Bar & Grill A utumn is the best time to try a twist on a classic comfort food. This recipe will warm you up on a cold day. Serve as a side dish, or even as the main meal. Cooking Skill Level: Intermediate Prep Time: 10 Minutes Total Cooking Time: 40 Minutes Serves: 8 Portions Ingredients 4 quarts water 1/2 teaspoon salt 1/2 teaspoon olive oil 1 pound elbow macaroni 1 stick (4 ounces) salted butter, cut into 8 slices 1/2 cup all-purpose flour 1 cup whole milk 1/2 cup evaporated milk 1/2 cup 40 percent heavy cream 1/4 teaspoon white pepper 1 cup grated parmesan cheese 1 1/2 cup shredded Comté cheese 1 teaspoon white truffle oil 3 cups shredded white cheddar cheese 1/8 cup diced chives Directions Preheat oven to 425 degrees. Bring a large stock pot with water to a boil and add salt, olive oil and macaroni. Cook macaroni to al dente as instructed on packaging. While macaroni is cooking, heat a large sauce pan on medium heat and melt butter. Once butter is simmering, sift and whisk flour into sauce pan, stirring constantly, until the roux is a golden straw color (do not brown the roux). Add white truffle oil. When macaroni is finished cooking, strain and combine with cheese sauce in a deep aluminum tray. Top the macaroni and cheese with the white cheddar and place in the oven for 10 minutes or until cheese crust is golden brown. Remove and allow to cool for 10 minutes. Garnish with chives and serve.
